Does eating unripened fruit or vegetables give you any more nutrition/ vitamins/ etc?

I am simply curious. I was just eating an unripened plum which tasted horrid and sour. As it ripens, the flavor obviously gets sweeter and the texture softer. Does eating a fruit or vegetable before it is ready provide any more nutrients or vitamins?
